Cheese is a food derived from milk which is produced in a wide range of flavours, textures. . The milk can be either cows, buffalo, goat or sheep milk. It comprises proteins and fat from milk. During production, the milk is usually acidified, and the adding the enzyme rennet causes coagulation. The solids are separated and pressed into final form. Some cheeses have mold on the rind or the outer layer, or throughout. Blue cheese type has Penicillium added so that the final product is spotted or veined throughout with blue, or blue-grey mould. These include Stilton, Shropshire Blue, Norbury Blue and Dorset Blue. Cheese styles, texture and flavours depend on the origin of the milk (including the animal's diet), whether they have been pasteurized or not, the amount of butterfat it contains, the bacteria and mould, the processing, and aging. Flavouring can be added such as herbs or spices or even storing the cheese in a smoker. Other ingredients may be added to some cheeses, such as black pepper, chilli, garlic, chives or cranberries. These include Hot Chilli, Scrumpy Apple and Hobson Ale. The yellow to red colour of some cheeses, is produced by adding annatto, these types of cheeses include Red Windsor, Red Leicester or Double Gloucester, etc. There are hundreds of cheese types produced in the UK.
